En una, vaig fer <a href="http://thermofacilibo.com/2018/10/05/pizza-bolonyesa-amb-salsa-barbacoa/”>la pizza bolonyesa, de la qual us vaig deixar el pas a pas, i vaig deixar pendent pel post d’avui el farcit de l’altra pizza, la carbonara. Doncs bé, aquí el teniu!!

Torno a deixar les quantitats per fer la massa de dues pizzes grans. Tot seguit, el pas a pas per fer-ne una d’elles,  la carbonara.

Massa: per a 2 pizzes grans  (35 cm diàmetre aprox.)

  • 220 g d’aigua
  • 30 g d’oli d’oliva verge extra + una mica més per untar la safata
  • 1 culleradeta de sucre
  • 20 g de llevat fresc
  • 400 g de farina de força
  • 1 culleradeta de sal

Cobertura carbonara: (per 1 pizza)

  • 75 g de ceba
  • 25 g d’oli d’oliva verge extra
  • 5 llesques de bacó fumat
  • 175-180 g de creme fraîche
  • 1 ou (L)
  • 1 polsim de sal
  • 40 g de formatge parmesà ratllat
  • 80 g de xampinyó fresc (laminats)
  • 40 g de mozzarel·la ratllada
  • 2-3 polsims d’orenga sec

Preparació:

Massa: (2 pizzes grans)

  1. Posar l’aigua dins el got, afegir l’oli, el sucre i el llevat fresc esmicolat. Programar 1 minut, temperatura 37° i velocitat 2
  2. Afegir la farina i la sal. Pastar durant 2 minuts, velocitat espiga.
  3. Fer una bola amb la massa i col·locar-la dins un bol lleugerament untat amb oli. Tapar el bol amb un tros de film transparent pinzellat amb oli, perquè la massa en pujar, no s’hi enganxi. Deixar llevar una hora dins un lloc lliure de corrents d’aire, com ara el forn apagat.

Cobertura carbonara: (per 1 pizza)

  1. Preescalfar el forn a 220º
  2. Dins el got de la thermomix posar la ceba i l’oli. Triturar 5 segons a velocitat 4. A continuació sofregir 5 minuts, temperatura 120º i velocitat 1.
  3. Afegir les llesques de bacó i sofregir 2 minuts, temperatura 120º, gir invers i velocitat cullera.
  4. Afegir la creme fraîche i programar 1 minut, temperatura 100º, gir invers i velocitat cullera.
  5. Incorporar l’ou i programar 30 segons, gir invers i velocitat 1.
  6. Posar la sal i el formatge ratllat i barrejar durant 10 segons, gir invers i velcocitat 1. Acabar de barrejar-ho bé amb l’espàtula. Reservar.

Muntatge i cocció: (per 1 pizza)

  1.   2. Estirar una de les boles sobre una superfície lleugerament enfarinada i amb un corró, formar un cercle. Col·locar aquest sobre una safata de forn o motlle especial per pizzes, prèviament untat amb oli o folrat amb paper de cuina. Deixar tot el vol una mica més gruixut.
  3. Abocar la mescla del got sobre la massa, repartir els xampinyons, la mozzarella ratllada i l’orenga sec al damunt.
  4. Enfornar durant 20-22 minuts a 220° o fins que veiem que la massa i la superfície daurades.
  5. Servir immediatament.
